For the last four years Plates have championed the humble vegetable and pushed it to its furthest limits, developing processes that elevate plant-based food into the most incredible dishes and experiences.

Based on his own personal health journey, chef Kirk Haworth has amassed a wealth of knowledge about the nourishing and medicinal properties of foods and has used this to further inspire his approach to cooking vegan and getting the most out of every ingredient. He additionally draws from his 17 years working in the best Michelin kitchens to deliver delicious food with finesse. Expect a mindful and passionate approach to the course and learn how to make things look as incredible as they taste, too.

“After struggling with chronic health issues I switched to a plant-based diet and it helped me a lot. As a chef working in some of the best Michelin restaurants around the world I wasn’t willing to compromise on anything, so I dedicated myself to creating recipes and techniques that push the boundaries of plant-based cooking. I'm so excited to share with you an insight into our vegetable craft approach, and trust me - vegetables are never now boring! This course will show you that they can be spectacular.”
